Mango Layer

Cheesecake Layer

- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
Base Layer
- 1 package (10-12 ounces) ladyfinger cookies or sponge cake, cut into cubes

Instructions
- Prepare the Mango Puree: In a blender or food processor, combine one diced mango with the lemon juice and blend until smooth. Set this mango puree aside for layering and moistening the base.
- Make the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, continuing to beat until fully combined. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture. Finally, fold in the reserved mango puree until distributed evenly. Keep some diced mango for garnish.
- Assemble the Trifle: Using a trifle dish or individual glasses, place a layer of ladyfinger cookies or sponge cake cubes as the base. Drizzle some mango puree over the cookies or cake to lightly moisten them. Spoon a layer of the mango cheesecake mixture over this, spreading it evenly. Repeat layering of cookies/cake, mango puree, and cheesecake mixture until the container is filled, finishing with a cheesecake layer on top.
- Decorate and Chill: Garnish the top of the trifle with fresh mango slices, the reserved diced mango, whipped cream, and mint leaves for a fresh look. Cover the dish or glasses with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set well.
- Serve: Prior to serving, add additional mango slices, whipped cream, and mint leaves if desired for an enhanced presentation. Serve chilled and enjoy with friends and family.
