Ingredients
Scale
Filling
- 1 lb fresh lobster meat
- 4 tbsp unsalted butter
- 1 medium onion (finely chopped)
- 2 stalks celery (chopped)
- 2 medium carrots (diced)
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tbsp fresh thyme (chopped)
- 2 tbsp fresh parsley (chopped)
- Salt and pepper to taste
Crust
- 1 sheet puff pastry (thawed)
- 1 sheet puff pastry (for top layer, thawed)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the pot pie.
- Sauté Vegetables: In a large skillet over medium heat, melt the butter. Add finely chopped onion, chopped celery, and diced carrots. Cook them until they become soft and fragrant, approximately 5 to 7 minutes.
- Add Liquids and Lobster: Stir in the fresh lobster meat, heavy cream, and low-sodium chicken broth. Allow the mixture to simmer gently for 5 to 10 minutes until the filling thickens slightly, stirring occasionally to combine flavors.
- Season and Add Herbs: Mix in chopped fresh thyme and parsley, then season with salt and pepper to your preference. Taste and adjust seasoning if necessary.
- Assemble Pot Pie: Grease a pie dish and line it with one sheet of thawed puff pastry. Pour the lobster and vegetable filling evenly over the pastry. Cover with the second sheet of puff pastry, sealing the edges by pinching or crimping. Cut small slits on the top to allow steam to escape during baking.
- Bake: Place the assembled pot pie in the preheated oven and bake for 30 to 35 minutes until the pastry is puffed and beautifully golden brown.
- Serve: Remove from the oven and let it cool for a few minutes before serving warm.
Notes
- Ensure to thaw the puff pastry sheets completely before assembling for best texture.
- You can substitute chicken broth with seafood broth for enhanced lobster flavor.
- For a richer filling, add a tablespoon of flour when sautéing vegetables to help thicken the sauce.
- This recipe can be prepared ahead by assembling the pie and refrigerating before baking; add extra baking time if baking from cold.
- Use fresh herbs rather than dried for a brighter flavor.
