Cookie Dough

Lemon Glaze
- 2 cups confectioners’ sugar

Instructions

- Cream Butter and Sugar: In the bowl of a stand mixer, cream together the softened butter and granulated sugar until light and fluffy, which should take about 1 minute.
- Add Egg and Lemon Zest: Add in the egg and lemon zest and continue mixing for about 30 seconds until well combined.
- Incorporate Dry Ingredients: Add the baking powder and salt, then gradually add the flour 1/2 cup at a time, mixing on low speed until fully incorporated into a smooth dough.
- Shape Cookies: Using a tablespoon-sized cookie dough scoop, portion out rounded balls of dough and place them about 1 inch apart on the prepared baking sheets. Gently flatten each ball with the bottom of a greased or sugared glass to ensure even baking.
- Bake Cookies: Bake the cookies for 8-10 minutes, rotating the baking sheets halfway through the baking time to ensure they cook evenly.
