Description

This quick and easy Lazy Enchiladas recipe uses frozen taquitos, enchilada sauce, and melted pepper jack cheese to create a delicious Mexican-inspired dish perfect for busy weeknights. With minimal prep and baking time, this meal is both convenient and satisfying.

Ingredients

Scale

Ingredients

  • 1 (22.5-oz) box frozen taquitos (any flavor)
  • 1 (10-oz) can enchilada sauce
  • 1½ cups shredded pepper jack cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425ºF (220ºC) and lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Arrange Taquitos: Place the frozen taquitos in a single layer inside the prepared baking pan, ensuring they are evenly spaced for consistent baking.
  3. Add Sauce: Pour the entire can of enchilada sauce evenly over the taquitos, making sure each is well coated to infuse flavor.
  4. Bake Initial: Bake the taquitos at 425ºF for 20 minutes to heat through and allow the sauce to meld with the taquitos.
  5. Add Cheese: Remove the pan from the oven and sprinkle the shredded pepper jack cheese evenly over the top of the hot taquitos and sauce.
  6. Final Bake: Return the baking pan to the oven and bake for an additional 5 minutes, or until the cheese has melted and is bubbly.

Notes

  • You can use any flavor of frozen taquitos based on your preference.
  • For extra spice, add diced jalapeños or a sprinkle of chili powder with the sauce.
  • Serve with sour cream, guacamole, or fresh cilantro for added flavor.
  • If you prefer a milder cheese, substitute pepper jack with cheddar or Monterey Jack.
  • Make sure not to overcrowd the baking pan to ensure even cooking.
