Description

This Key Lime Fudge recipe combines the creamy sweetness of white chocolate with the tangy zest and juice of key limes to create a luscious, refreshing treat. Smooth, rich, and perfectly balanced with just a hint of citrus, it’s a simple no-bake dessert that’s chilled until firm and perfect for sharing at any gathering.

Ingredients

Scale

Fudge Base

  • 3 cups white chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons unsalted butter

Key Lime Flavoring

  • 2 teaspoons key lime zest
  • 1/4 cup key lime juice (fresh or bottled)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Optional

  • Green food coloring (1-2 drops for a light tint)

Instructions

  1. Prepare the Pan: Line an 8×8-inch square baking dish with parchment paper, ensuring there is an overhang on the sides for easy removal of the fudge later.
  2. Melt Ingredients: In a saucepan set over medium-low heat, combine white chocolate chips, sweetened condensed milk, and unsalted butter. Stir constantly until the mixture is fully melted and smooth, taking care not to scorch the chocolate.
  3. Add Flavorings: Remove the saucepan from heat. Immediately stir in the key lime zest, key lime juice, vanilla extract, a pinch of salt, and green food coloring if using. Mix until everything is evenly incorporated.
  4. Pour Into Pan: Quickly pour the fudge mixture into the prepared baking dish and use a spatula to smooth the top evenly.
  5. Chill Until Set: Place the dish in the refrigerator and chill for at least 3 hours or until the fudge is completely firm to the touch.
  6. Serve: Use the parchment paper overhang to lift the fudge out of the dish. Cut into 36 squares and serve chilled.

Notes

  • Use fresh key lime juice if possible for the best authentic flavor, but bottled juice works in a pinch.
  • If you want a more intense lime flavor, increase the zest by half a teaspoon.
  • Store leftover fudge in an airtight container in the refrigerator for up to one week.
  • Allow fudge to come to room temperature for a few minutes before serving for a softer texture.
  • Green food coloring is optional and purely for aesthetic purposes to enhance the key lime theme.
