Ingredients
Scale
Fudge Base
- 3 cups white chocolate chips
- 1 (14 oz) can sweetened condensed milk
- 2 tablespoons unsalted butter
Key Lime Flavoring
- 2 teaspoons key lime zest
- 1/4 cup key lime juice (fresh or bottled)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Optional
- Green food coloring (1-2 drops for a light tint)
Instructions
- Prepare the Pan: Line an 8×8-inch square baking dish with parchment paper, ensuring there is an overhang on the sides for easy removal of the fudge later.
- Melt Ingredients: In a saucepan set over medium-low heat, combine white chocolate chips, sweetened condensed milk, and unsalted butter. Stir constantly until the mixture is fully melted and smooth, taking care not to scorch the chocolate.
- Add Flavorings: Remove the saucepan from heat. Immediately stir in the key lime zest, key lime juice, vanilla extract, a pinch of salt, and green food coloring if using. Mix until everything is evenly incorporated.
- Pour Into Pan: Quickly pour the fudge mixture into the prepared baking dish and use a spatula to smooth the top evenly.
- Chill Until Set: Place the dish in the refrigerator and chill for at least 3 hours or until the fudge is completely firm to the touch.
- Serve: Use the parchment paper overhang to lift the fudge out of the dish. Cut into 36 squares and serve chilled.
Notes
- Use fresh key lime juice if possible for the best authentic flavor, but bottled juice works in a pinch.
- If you want a more intense lime flavor, increase the zest by half a teaspoon.
- Store leftover fudge in an airtight container in the refrigerator for up to one week.
- Allow fudge to come to room temperature for a few minutes before serving for a softer texture.
- Green food coloring is optional and purely for aesthetic purposes to enhance the key lime theme.
