Ingredients
Scale
Main Ingredients
- 1 cup corn kernels (fresh, frozen, or canned and drained)
- 1–2 jalapeños, finely chopped (seeds removed for less heat)
- 1/2 cup shredded cheddar cheese
- 1/4 cup cream cheese, softened
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Breading and Frying
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (plain or seasoned)
- Vegetable oil for frying
Instructions
- Mix Ingredients: In a mixing bowl, combine the corn, chopped jalapeños, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until fully combined to create the nugget mixture.
- Shape Nuggets: Use your hands or a spoon to form the mixture into small nugget-sized balls and place them on a baking sheet. Ensure they are compact for frying.
- Freeze Nuggets: Freeze the nuggets for 20–30 minutes to firm up. This helps them hold their shape during frying.
- Prepare Breading Stations: Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs for coating the nuggets.
- Bread Nuggets: Dip each frozen nugget first into the flour, then into the beaten eggs, and finally coat thoroughly with breadcrumbs.
- Heat Oil: Heat vegetable oil in a deep skillet or pot over medium-high heat to 350°F (175°C) to prepare for frying.
- Fry Nuggets: Fry the nuggets in batches for 2–3 minutes per side, or until they turn golden brown and crispy. Avoid overcrowding the pan.
- Drain and Serve: Remove nuggets with a slotted spoon and drain on paper towels to remove excess oil. Serve warm with your favorite dipping sauce.
Notes
- For extra heat, leave jalapeño seeds in or increase the number of peppers used.
- To make them healthier, you can bake the nuggets at 400°F (200°C) for 15–18 minutes or air fry at 375°F (190°C) for 10–12 minutes instead of deep frying.
- Use seasoned breadcrumbs for added flavor.
- Ensure nuggets are well frozen before breading to help maintain shape during frying.
