Description

Jalapeño Corn Nuggets are crispy, cheesy bites bursting with sweet corn and a spicy kick from jalapeños. These golden nuggets combine shredded cheddar, cream cheese, and flavorful seasonings, coated in breadcrumbs and fried to perfection. Perfect as a party appetizer or snack, they can also be baked or air-fried for a lighter option.

Ingredients

Scale

Main Ingredients

  • 1 cup corn kernels (fresh, frozen, or canned and drained)
  • 12 jalapeños, finely chopped (seeds removed for less heat)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Breading and Frying

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (plain or seasoned)
  • Vegetable oil for frying

Instructions

  1. Mix Ingredients: In a mixing bowl, combine the corn, chopped jalapeños, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until fully combined to create the nugget mixture.
  2. Shape Nuggets: Use your hands or a spoon to form the mixture into small nugget-sized balls and place them on a baking sheet. Ensure they are compact for frying.
  3. Freeze Nuggets: Freeze the nuggets for 20–30 minutes to firm up. This helps them hold their shape during frying.
  4. Prepare Breading Stations: Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs for coating the nuggets.
  5. Bread Nuggets: Dip each frozen nugget first into the flour, then into the beaten eggs, and finally coat thoroughly with breadcrumbs.
  6. Heat Oil: Heat vegetable oil in a deep skillet or pot over medium-high heat to 350°F (175°C) to prepare for frying.
  7. Fry Nuggets: Fry the nuggets in batches for 2–3 minutes per side, or until they turn golden brown and crispy. Avoid overcrowding the pan.
  8. Drain and Serve: Remove nuggets with a slotted spoon and drain on paper towels to remove excess oil. Serve warm with your favorite dipping sauce.

Notes

  • For extra heat, leave jalapeño seeds in or increase the number of peppers used.
  • To make them healthier, you can bake the nuggets at 400°F (200°C) for 15–18 minutes or air fry at 375°F (190°C) for 10–12 minutes instead of deep frying.
  • Use seasoned breadcrumbs for added flavor.
  • Ensure nuggets are well frozen before breading to help maintain shape during frying.
