Instructions
- Prepare the Instant Pot: Turn the Instant Pot to sauté mode and melt the butter with olive oil to create a flavorful base for the soup.
- Sauté Aromatics: Add the finely chopped onion and cook until softened, about 3 to 4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant to release their flavors.
- Cook Mushrooms: Add the sliced mushrooms along with salt, black pepper, and dried thyme. Cook until the mushrooms release their moisture and begin to brown, about 5 to 7 minutes, which develops a rich flavor.
- Add Liquids and Seasoning: Pour in the vegetable broth and soy sauce. Stir well to combine all ingredients evenly.
- Pressure Cook: Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 5 minutes to meld the flavors together.
