Broth and Thickening

  • 1 tablespoon soy sauce
  • 2 tablespoons all-purpose flour

Instructions

  1. Prepare the Instant Pot: Turn the Instant Pot to sauté mode and melt the butter with olive oil to create a flavorful base for the soup.
  2. Sauté Aromatics: Add the finely chopped onion and cook until softened, about 3 to 4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant to release their flavors.
  3. Cook Mushrooms: Add the sliced mushrooms along with salt, black pepper, and dried thyme. Cook until the mushrooms release their moisture and begin to brown, about 5 to 7 minutes, which develops a rich flavor.
  4. Add Liquids and Seasoning: Pour in the vegetable broth and soy sauce. Stir well to combine all ingredients evenly.
  5. Pressure Cook: Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 5 minutes to meld the flavors together.
  6. Pressure Release: After cooking, allow a natural pressure release for 10 minutes, then carefully release any remaining pressure manually to safely open the lid.
  7. Thicken the Soup: In a small bowl, mix the flour and water to create a slurry. Stir the slurry into the soup using the sauté mode until the soup thickens slightly, enhancing its creamy texture.
