Ingredients
Scale
Chicken and Noodles
- 1 pound chicken breasts, cut into 1-inch pieces
- 8 ounces spaghetti noodles, uncooked
- 1 (10.8-ounce) frozen vegetable medley (Asian medley recommended)
Sauce
- 2 cups chicken broth
- ¼ cup soy sauce
- ¼ cup honey
- 1 tablespoon brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- ½ teaspoon ground ginger
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch
Garnish
- Sesame seeds
- Chopped green onion
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C). Lightly spray a 13 x 9 x 2-inch rectangular baking dish with nonstick cooking spray to prevent sticking.
- Layer Noodles and Vegetables: Place the uncooked spaghetti noodles evenly at the bottom of the prepared baking dish. Next, spread the frozen vegetable medley evenly over the noodles.
- Add Chicken: Arrange the chicken breast pieces on top of the layered noodles and vegetables, distributing them evenly.
- Prepare Sauce: In a medium-sized bowl, thoroughly whisk together the chicken broth, soy sauce, honey, brown sugar, rice vinegar, sesame oil, ground ginger, minced garlic, and cornstarch until smooth and fully combined.
- Pour Sauce Over Dish: Carefully pour the prepared sauce evenly over the chicken, noodles, and vegetables in the baking dish.
- Cover and Bake: Cover the dish tightly with aluminum foil. Bake in the preheated oven for 30 minutes to allow the chicken to cook and noodles to start softening.
- Stir and Bake Uncovered: Remove the foil and gently stir the casserole to help loosen the noodles from the bottom. Return the dish to the oven and bake uncovered for an additional 20 minutes until the chicken is completely cooked and the noodles are tender.
- Garnish and Serve: Once baked, sprinkle sesame seeds and chopped green onions on top for garnish. Serve warm and enjoy your flavorful honey sesame chicken noodle bake.
Notes
- Using an Asian vegetable medley enhances the dish with authentic flavors, but you can substitute with your favorite frozen mixed vegetables.
- If you prefer a thicker sauce, you can increase the cornstarch to 1.5 tablespoons.
- Make sure to cut the chicken into uniform pieces to ensure even cooking.
- For a gluten-free version, use tamari or gluten-free soy sauce and gluten-free noodles.
- Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
