Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the honey, soy sauce, lemon juice, minced garlic, and grated ginger until well combined. Add the peeled and deveined shrimp to the bowl, tossing them to coat evenly with the marinade. Cover and refrigerate for 15 to 30 minutes to allow the flavors to infuse.
  2. Cook the Shrimp: Heat the olive oil in a large skillet over medium-high heat. Remove the shrimp from the marinade, reserving the marinade for later. Place the shrimp in a single layer in the hot skillet and cook for 1 to 2 minutes on each side, or until they turn pink and opaque. Transfer the cooked shrimp to a plate and set aside.
  3. Make the Sauce: Pour the reserved marinade into the same skillet and bring it to a simmer over medium heat. If you prefer a thicker sauce, mix the cornstarch and water together in a small bowl until smooth, then stir this slurry into the simmering sauce. Cook for an additional 1 to 2 minutes, stirring occasionally, until the sauce thickens.
