Description

These Honey Barbeque Chicken Meatballs are a delicious and easy-to-make dish featuring tender ground chicken meatballs baked to perfection and coated in a sweet and tangy honey barbecue sauce. Perfect as a party appetizer or a satisfying main course served over rice.

Ingredients

Scale

Meatballs

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil

Sauce

  • 1 cup barbecue sauce
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven. Preheat your oven to 400°F and line a baking sheet with parchment paper to ensure non-stick cooking and easy cleanup.
  2. Mix the meatball ingredients. In a large bowl, combine the ground chicken, breadcrumbs, milk, egg, minced garlic, chopped onion, grated Parmesan cheese, salt, black pepper, smoked paprika, and fresh parsley. Mix gently with your hands or a spoon until just combined to avoid tough meatballs.
  3. Form the meatballs. Shape the mixture into small, uniform 1-inch meatballs and place them evenly spaced on the prepared baking sheet. Drizzle the meatballs lightly with olive oil for a nice golden finish as they bake.
  4. Bake the meatballs. Bake in the preheated oven for 18 to 20 minutes, or until the meatballs are cooked through and lightly golden on the outside.
  5. Prepare the sauce. While the meatballs are baking, combine the barbecue sauce, honey, and apple cider vinegar in a saucepan over medium heat. Stir the mixture and let it simmer for 3 to 5 minutes until it is warmed through and slightly thickened.
  6. Toss meatballs in sauce. Once the meatballs are cooked, add them to the saucepan with the sauce and toss gently to coat each meatball evenly with the honey barbeque sauce.
  7. Serve. Serve the meatballs warm, either as an appetizer or over rice for a complete meal.

Notes

  • You can make these meatballs ahead of time and reheat them in the sauce for convenience.
  • For a spicier version, add a dash of hot sauce or cayenne pepper to the barbecue sauce.
  • These meatballs are great served as an appetizer or over rice for a full meal.
