Instructions
- Preheat the oven. Preheat your oven to 400°F and line a baking sheet with parchment paper to ensure non-stick cooking and easy cleanup.
- Mix the meatball ingredients. In a large bowl, combine the ground chicken, breadcrumbs, milk, egg, minced garlic, chopped onion, grated Parmesan cheese, salt, black pepper, smoked paprika, and fresh parsley. Mix gently with your hands or a spoon until just combined to avoid tough meatballs.
- Form the meatballs. Shape the mixture into small, uniform 1-inch meatballs and place them evenly spaced on the prepared baking sheet. Drizzle the meatballs lightly with olive oil for a nice golden finish as they bake.
- Bake the meatballs. Bake in the preheated oven for 18 to 20 minutes, or until the meatballs are cooked through and lightly golden on the outside.
- Prepare the sauce. While the meatballs are baking, combine the barbecue sauce, honey, and apple cider vinegar in a saucepan over medium heat. Stir the mixture and let it simmer for 3 to 5 minutes until it is warmed through and slightly thickened.
