Ingredients
Scale
For the Candy Base
- 2 cups Granulated Sugar (Primary sweetener.)
- 1 cup Corn Syrup (Prevents crystallization.)
- 1/2 cup Water (For dissolving sugar.)
- 3 large Fresh Oranges (For juice and zest, about 3/4 cup juice and zest from 3 oranges.)
- 1 tablespoon Unflavored Gelatin (For texture.)
- 2 tablespoons Butter (Adds richness.)
Instructions
- Prepare Orange Juice and Zest: Start by zesting the fresh oranges carefully to collect the orange zest. Then, juice the oranges until you have approximately 3/4 cup of fresh orange juice measured and set aside.
- Create Syrup Mixture: In a medium saucepan, combine the orange juice, 1/2 cup water, 2 cups granulated sugar, and 1 cup corn syrup. Place the pan over medium heat and stir until the sugar dissolves completely and the mixture begins to simmer gently.
- Bloom the Gelatin: In a small bowl, sprinkle 1 tablespoon of unflavored gelatin over some cold water and let it sit for about 5 minutes to bloom, allowing the gelatin to absorb the water and soften.
- Incorporate Gelatin into Syrup: Stir the bloomed gelatin into the simmering orange syrup, mixing thoroughly until the gelatin is fully dissolved and evenly incorporated.
- Add Butter and Zest: Add 2 tablespoons of butter and the freshly grated orange zest into the mixture. Continue to cook and gently simmer for an additional 5 minutes while stirring to blend the flavors and enrich the candy base.
- Cool the Mixture: Remove the saucepan from heat and allow the candy mixture to cool at room temperature for 1 to 2 hours. This cooling step helps prepare the mixture for setting.
- Set the Candy: Pour the cooled mixture into a greased 8×8-inch baking dish or candy molds to your preference. Place in the refrigerator and chill for 4 to 6 hours until the candy is fully set and firm.
- Cut and Serve: Once set, remove the candy from the molds or dish. Cut into bite-sized pieces. Optionally, roll the pieces in powdered sugar to prevent sticking and add a sweet finish before serving.
Notes
- Use ripe, fresh oranges for the best flavor and sweetness.
- Ensure the gelatin is fully dissolved to avoid a grainy texture.
- Store candies in an airtight container in the refrigerator to keep them fresh.
- Rolling candies in powdered sugar is optional but helps reduce stickiness.
- Use a candy thermometer if available to monitor syrup temperature for precision.
