Description

These High Protein Blueberry Bagels are a delicious and healthy twist on traditional bagels, packed with protein from Greek yogurt and whey protein powder. Soft, slightly sweet, and studded with juicy blueberries, they make an ideal breakfast or snack option for anyone seeking a nutritious boost.

Ingredients

Scale

Bagel Dough

  • 1 cup plain nonfat Greek yogurt
  • 1 cup self-rising flour (plus extra for dusting)
  • 1 scoop (about 30g) vanilla or unflavored whey protein powder
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup fresh or frozen blueberries (lightly dusted with flour)

Egg Wash

  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent the bagels from sticking during baking.
  2. Mix Dry and Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, self-rising flour, whey protein powder, and cinnamon if using. Stir these ingredients together until a dough starts to form.
  3. Add Blueberries: Gently fold the flour-coated blueberries into the dough, taking care not to crush them, to distribute evenly throughout the bagel dough.
  4. Knead Dough: Lightly flour a clean surface and knead the dough for 2 to 3 minutes until it becomes smooth and cohesive.
  5. Shape Bagels: Divide the dough into 4 equal portions. Roll each portion into a log then join the ends to form a traditional bagel shape, making sure the ends are well sealed.
  6. Place on Baking Sheet: Arrange the shaped bagels on the prepared baking sheet, spaced evenly apart.
  7. Apply Egg Wash: Brush the tops of each bagel with the beaten egg to give them a shiny, golden finish after baking.
  8. Bake: Bake the bagels in the preheated oven for 22 to 25 minutes or until they turn golden brown and cooked through.
  9. Cool: Remove the bagels from the oven and let them cool on a wire rack before serving to allow the texture to set.

Notes

  • If self-rising flour is unavailable, substitute with 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
  • Use frozen blueberries if fresh are not available, but dust them with flour to prevent excess moisture causing soggy dough.
  • These bagels are best enjoyed fresh on the same day but can be stored in an airtight container for up to 2 days.
