Instructions

  1. Brown the meats. In a large skillet, heat olive oil over medium-high heat. Add the ground beef, ground pork, and Italian sausage. Cook, breaking it up with a spoon, until browned and fully cooked, about 8-10 minutes. Drain any excess fat to reduce grease in the chili.
  2. Transfer to slow cooker. Move the cooked meat mixture into the slow cooker to begin the slow cooking process.
  3. Add vegetables and tomatoes. Add the chopped onion and minced garlic to the slow cooker along with the diced tomatoes (with juice), tomato paste, tomato sauce, and beef broth. Stir well to combine all ingredients thoroughly.
  4. Season the chili. Sprinkle in chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and optional cayenne pepper. Stir again to evenly incorporate all spices throughout the mixture.
  5. Cook the chili low and slow. Cover and cook on low heat for 6-8 hours or use high heat for 3-4 hours. The chili will thicken and flavors will meld beautifully during this time.
