Instructions
- Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Grease or line a 9-inch round or square baking pan to prevent the cake from sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt until well combined.
- Mix Wet Ingredients: In a separate bowl, beat the eggs and then add the maple syrup or honey, unsweetened applesauce, milk, and vanilla extract. Whisk these ingredients together until smooth.
- Combine & Fold in Apples: Pour the wet ingredients into the dry ingredients and stir until fully combined. Gently fold in the diced apples and chopped nuts if you are using them.
- Bake: Transfer the batter to the prepared pan, spreading it out evenly. Bake in the oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
