Description

This Healthy Breakfast Oatmeal Apple Cake is a wholesome and delicious way to start your day. Packed with rolled oats, warming spices, fresh apples, and a touch of natural sweetness from maple syrup or honey, this moist cake offers the perfect balance of flavor and nutrition. It’s easy to prepare and ideal for a nutritious breakfast or a snack, wholesome enough to keep you energized all morning.

Ingredients

Scale

Dry Ingredients

  • 2 cups rolled oats
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt

Wet Ingredients

  • 2 eggs
  • ¼ cup maple syrup or honey
  • ¼ cup unsweetened applesauce
  • ½ cup milk (dairy or non-dairy)
  • 1 tsp vanilla extract

Add-ins

  • 2 apples, peeled, cored, and diced
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Grease or line a 9-inch round or square baking pan to prevent the cake from sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt until well combined.
  3. Mix Wet Ingredients: In a separate bowl, beat the eggs and then add the maple syrup or honey, unsweetened applesauce, milk, and vanilla extract. Whisk these ingredients together until smooth.
  4. Combine & Fold in Apples: Pour the wet ingredients into the dry ingredients and stir until fully combined. Gently fold in the diced apples and chopped nuts if you are using them.
  5. Bake: Transfer the batter to the prepared pan, spreading it out evenly. Bake in the oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool & Serve: Allow the cake to cool in the pan for about 10 minutes. Slice and serve warm or at room temperature for a comforting and healthy breakfast treat.

Notes

  • You can substitute the rolled oats with gluten-free oats to make this recipe gluten-free.
  • For a vegan version, replace eggs with flax eggs and use maple syrup instead of honey.
  • Ensure apples are peeled and diced evenly for consistent texture throughout the cake.
  • Feel free to add more spices like ground ginger or cloves for extra warmth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
