- 1 tablespoon olive oil
- 1/2 pound maple breakfast sausage
- 1/2 small onion, finely chopped
- 1/2 red bell pepper, finely chopped
- 1/2 cup shredded cheddar cheese
- 1 teaspoon Dijon mustard
- 1/4 teaspoon black pepper
Dough and Topping
- 1 package refrigerated pie crusts (2 crusts, softened as directed)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
- Cook Sausage and Vegetables: In a skillet over medium heat, heat olive oil. Add the maple breakfast sausage, breaking it up with a spoon, cooking until browned and fully cooked. Then add the finely chopped onion and red bell pepper, cooking for an additional 3–4 minutes until softened. Remove from heat to cool slightly.
- Mix Filling: Once slightly cooled, stir in the shredded cheddar cheese, Dijon mustard, and black pepper until everything is well combined, creating a flavorful filling.
- Prepare Pie Crusts: Unroll the softened pie crusts and cut each into 4 equal pieces, yielding 8 squares total. These will form the base of each hand pie.
- Assemble Hand Pies: Spoon a heaping tablespoon of the sausage filling onto one half of each dough piece, leaving space around the edges. Fold the dough over to form a half-moon or rectangular shape. Press the edges firmly with a fork to seal the pies completely to prevent filling leakage during baking.
- Apply Egg Wash and Vent: Place the hand pies on the prepared baking sheet. Brush the tops of each with the beaten egg to help achieve a golden, glossy finish after baking. Cut a small slit in the top of each pie for steam to vent while baking.
- Bake: Bake the hand pies in the preheated oven for 20–25 minutes or until they’re golden brown and cooked through.
- Cool and Serve: Remove the pies from the oven and allow them to cool slightly before serving to avoid burning and to let the filling set.

- You can substitute maple sausage with regular breakfast sausage and add a teaspoon of maple syrup to the filling for sweetness.
- These hand pies can be prepared ahead and frozen before baking. When baking from frozen, add an extra few minutes to the bake time to ensure they cook through.
