Sauce Ingredients
- ¼ cup soy sauce
- 2 Tbsp brown sugar
- 1 tsp sesame oil
- 1 garlic clove, grated
- 1 tsp grated ginger
- 1 Tbsp cornstarch
- 2 Tbsp water
- 1 tsp chili garlic sauce
Vegetables
- 1 small onion, diced
- 1 large zucchini (about ¾ lb), sliced
Protein & Cooking Fat
- 1 Tbsp cooking oil
- 1 lb ground turkey
Instructions
- Make the Sauce: In a bowl, combine soy sauce, brown sugar, sesame oil, grated garlic, grated ginger, cornstarch, water, and chili garlic sauce. Whisk thoroughly until the cornstarch is dissolved and set aside.
- Sauté Veggies: Heat the cooking oil in a large skillet over medium-high heat. Add the diced onion and sliced zucchini. Cook, stirring frequently, until the vegetables are browned and slightly tender, about 5-7 minutes. Remove them from the skillet and set aside.
- Cook Turkey: In the same skillet, add the ground turkey. Brown it over medium-high heat, breaking it apart with a spatula, until fully cooked and no longer pink, about 6-8 minutes.
- Combine: Add the sautéed onions and zucchini back into the skillet with the cooked ground turkey. Pour the prepared sauce over the mixture. Stir to coat everything evenly and let the skillet simmer for 2 minutes so the sauce thickens and flavors meld.
- Serve: Remove from heat and serve the mixture hot. Optionally, garnish with chopped scallions or sesame seeds, and serve alongside steamed rice or your preferred grain.
Notes
- Ensure the ground turkey is cooked thoroughly to an internal temperature of 165°F (74°C) for food safety.
- Adjust the amount of chili garlic sauce to your preferred spice level.
- Using fresh grated garlic and ginger enhances the flavor significantly.
- For a lower carb option, skip rice or serve with cauliflower rice.
- This dish reheats well and can be stored in the refrigerator for up to 3 days.
