Ingredients
Scale
Fish
- 1 whole Red Snapper (scaled, gutted, and fins removed)
Seasonings and Oils
- 2 tablespoons Olive Oil (for rubbing on fish)
- 1 teaspoon Kosher Salt (adjust to taste)
- 1 teaspoon Freshly Ground Black Pepper (for seasoning)
- 1 tablespoon Vegetable Oil (for oiling grill grates)
Citrus and Herbs
- 1 whole Lemon (half sliced for stuffing, wedges for serving)
- 1 whole Lime (half sliced for stuffing, wedges for serving)
- 1 handful Fresh Herbs (such as dill, cilantro, parsley)
Instructions
- Preheat Grill: Preheat your grill to high heat to ensure a hot cooking surface that will sear the fish nicely.
- Prepare Grill Grates: Thoroughly oil the grill grates using vegetable oil applied with a paper towel or rag to prevent the fish from sticking.
- Season the Fish Inside: Generously season the inside cavity of the red snapper with kosher salt and freshly ground black pepper, then stuff with half slices of lemon, lime, and the fresh herbs for aromatic flavor infusion.
- Season the Fish Outside: Rub olive oil all over the outside of the fish to help crisp the skin and prevent sticking. Then season the outside again with salt and black pepper for additional flavor.
- Grill the Fish: Place the seasoned red snapper directly onto the hot grill. Allow it to sear without moving for 6-8 minutes on one side to develop a charred crust.
- Flip and Finish Cooking: Carefully flip the fish and grill the other side for another 6-8 minutes, until the skin is charred and the flesh flakes easily with a fork, totaling approximately 10-15 minutes of grilling time depending on fish size.
- Serve: Remove from the grill and serve immediately with additional lemon and lime wedges. This pairs well with fresh slaw or grilled vegetables for a complete meal.
Notes
- Make sure the grill is properly oiled to prevent the fish from sticking and tearing when flipping.
- Use a fish spatula or two wide spatulas when flipping the fish to keep it intact.
- Adjust grilling times based on the thickness of the fish; larger fish may require slightly more time.
- Fresh herbs like dill, cilantro, or parsley enhance the flavor but can be substituted according to preference.
- To add a smoky flavor, use charcoal or wood chips if using a gas grill.
