Ingredients
Scale
Chicken Marinade
- 1 ½ pounds boneless skinless chicken thighs
- 3 tablespoons olive oil
- 3 tablespoons plain Greek yogurt
- 3 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
For Serving
- 6 pita breads or flatbreads
- 1 cup chopped tomatoes
- 1 cup chopped cucumber
- ½ red onion, thinly sliced
- 1 cup shredded lettuce
- 1 cup tzatziki sauce
Instructions
- Prepare the Marinade: In a large bowl, whisk together olive oil, Greek yogurt, lemon juice, minced garlic, red wine vinegar, dried oregano, ground cumin, salt, black pepper, and paprika until well combined.
- Marinate the Chicken: Add the boneless skinless chicken thighs to the marinade and toss thoroughly to coat each piece evenly. Cover the bowl and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to infuse and the chicken to tenderize.
- Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 5 to 6 minutes on each side until fully cooked through and slightly charred on the outside. Once cooked, transfer the chicken to a plate and let it rest for 5 minutes to retain its juices.
- Slice the Chicken: After resting, slice the chicken thighs into thin strips ready to be assembled in the gyros.
- Warm the Pita Breads: Heat the pita breads by placing them in a dry skillet over medium heat for a few minutes or by wrapping them in foil and warming in the oven until soft and pliable.
- Assemble the Gyros: On each warmed pita, layer sliced chicken, shredded lettuce, chopped cucumber, chopped tomatoes, thinly sliced red onion, and finish with a generous dollop of tzatziki sauce.
- Serve: Fold the pita around the fillings and serve your delicious Greek Chicken Gyros warm, perfect for a satisfying lunch or dinner.
Notes
- Chicken breasts can be substituted for thighs; however, thighs remain juicier and more flavorful.
- For a low-carb variation, serve the gyro fillings over a salad or use large lettuce leaves as wraps instead of pita bread.
- Homemade tzatziki sauce delivers the best flavor experience though store-bought tzatziki works well in a pinch.
