Description

These Gooey Pecan Pie Bars combine the classic flavors of pecan pie with the ease of a bar dessert. Featuring a buttery crust made from yellow cake mix and a rich, gooey filling with corn syrup, brown sugar, cinnamon, and chopped pecans, these bars offer a perfect balance of sweet, nutty, and cinnamon-spiced goodness. Ideal for holiday gatherings or anytime a comforting, homemade treat is desired.

Ingredients

Scale

Crust

  • 2 (9-oz) boxes yellow cake mix (Jiffy brand)
  • ½ cup melted butter
  • 1 large egg

Filling

  • â…” cup reserved yellow cake mix
  • ½ cup firmly packed brown sugar
  • 1½ cups light corn syrup
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 3 large eggs
  • 1½ cups finely chopped pecans

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350ºF. Lightly spray a 9×13-inch baking pan with cooking spray and line it with parchment paper to ensure easy removal of the bars.
  2. Make and Bake Crust: Reserve â…” cup of the cake mix for the filling. In a bowl, combine the remaining cake mix, melted butter, and 1 egg until well mixed. Spread this mixture evenly in the prepared pan. Bake for 13-15 minutes or until the crust is lightly browned.
  3. Prepare Filling: In another bowl, mix together the reserved â…” cup cake mix, brown sugar, corn syrup, vanilla extract, cinnamon, and 3 eggs. Beat the mixture vigorously for 2 minutes to ensure it is smooth and well combined. Spread this filling evenly over the hot baked crust, then sprinkle the finely chopped pecans evenly over the top.
  4. Bake Bars: Return the pan to the oven and bake for 30 minutes until the filling is set and the top is golden and bubbly. Remove from oven and allow the bars to cool completely before cutting into 18 bars.

Notes

  • Line the baking pan with parchment paper extending over the edges to easily lift the entire slab out for clean cutting.
  • Make sure to beat the filling ingredients well to achieve a smooth, gooey texture.
  • Allow the bars to cool fully before cutting to prevent the filling from squishing out.
  • Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
