Ingredients
Scale
Potatoes
- 4 medium russet potatoes
Garlic Butter Mixture
- 3 tablespoons unsalted butter, melted
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme (or fresh, chopped)
Toppings and Garnish
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for roasting the potatoes evenly.
- Prepare Potatoes: Wash and dry the russet potatoes thoroughly. Slice them thinly and evenly into layers, taking care to leave about 1/4 inch at the bottom intact so the potatoes stay connected.
- Arrange Potatoes: Place the sliced potatoes upright on a parchment-lined baking sheet, spaced evenly to allow heat circulation and proper roasting.
- Make Garlic Butter Mixture: In a small bowl, combine melted butter, olive oil, minced garlic, salt, black pepper, and thyme. Mix well to infuse the flavors together.
- Brush Potatoes: Generously brush the garlic butter mixture all over the potatoes, making sure it seeps between the slices for maximum flavor.
- Roast Potatoes: Place the baking sheet in the oven and roast the potatoes for 40 to 45 minutes. Halfway through cooking, baste the potatoes again with any remaining garlic butter mixture to enhance moisture and taste.
- Add Parmesan: Remove the potatoes from the oven and sprinkle grated Parmesan cheese evenly on top. Return the potatoes to the oven for an additional 5 minutes to allow the cheese to melt and slightly brown.
- Garnish and Serve: Once roasted and cheesy, garnish the Hasselback potatoes with freshly chopped parsley. Serve warm to enjoy the crispy exterior and tender interior.
Notes
- You can substitute dried thyme with fresh thyme or rosemary for a different herb flavor.
- Make sure to not slice all the way through the potatoes to keep them intact during roasting.
- For extra crispiness, use olive oil or a mixture of butter and oil as per the recipe.
- These potatoes pair wonderfully with grilled meats, roasted chicken, or as a standalone vegetarian dish.
- Leftovers can be reheated in the oven to maintain crispiness.
