For the Steak

  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Prepare and cook potatoes: Heat a large cast iron skillet over medium heat. Add the olive oil and 2 tablespoons of ghee or butter. Once melted and hot, add the cubed Yukon gold potatoes along with the minced garlic, dried thyme, dried oregano, ½ teaspoon sea salt, and ¼ teaspoon ground black pepper. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 12-15 minutes.
  2. Cook the steak bites: Increase the heat to medium-high. Add additional ghee or butter to the same skillet. Season the sirloin steak cubes with salt and pepper. Add the steak to the skillet and sear, stirring occasionally, until the steak bites are nicely browned on all sides and cooked to your desired level of doneness, approximately 5-7 minutes.
