Sausage
- 250 grams (9 oz) Italian sausage (mild or spicy)
Sauce
- 4 cloves garlic, minced
- 60 grams (1/4 cup) unsalted butter
Seasonings & Garnish
- 2 tablespoons fresh parsley, chopped
- 50 grams (1/2 cup) grated Parmesan cheese
- Freshly ground black pepper, to taste
- Red pepper flakes, optional
- Salt, for pasta water
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water before draining the pasta.
- Prepare Sausage: Remove the casing from the Italian sausage and crumble the meat into small pieces.
- Cook Sausage: Heat a skillet over medium heat. Add the crumbled sausage and cook until browned and fully cooked through. Remove sausage from the skillet and set aside.
- Make Garlic Butter Sauce: In the same skillet, reduce heat to low and melt the unsalted butter. Add the minced garlic and sauté gently until fragrant, taking care not to burn the garlic.
- Toss Pasta and Sausage: Add the cooked pasta into the skillet with the garlic butter sauce. Toss to coat the pasta evenly. Then add the cooked sausage and mix well.
- Create Creamy Sauce: If the pasta looks dry, gradually add reserved pasta water a little at a time while tossing until a creamy sauce forms that coats the pasta nicely.
- Add Flavorings: Stir in the chopped fresh parsley and grated Parmesan cheese. Season with freshly ground black pepper and red pepper flakes to your preferred taste.
- Serve: Serve the garlic butter sausage pasta warm, garnished with extra parsley and Parmesan cheese if desired.
