This Garlic Butter Sausage Bites with Creamy Parmesan Pasta is a delicious and quick skillet dish perfect for weeknight dinners. Juicy Italian sausage sautéed with garlic and butter is tossed together with fettuccine pasta in a rich, creamy Parmesan sauce, finished with fresh parsley for a bright, flavorful touch.
Ingredients
Scale
Sausage and Garlic
- 1 lb Italian sausage, sliced
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
Pasta and Sauce
- 8 oz fettuccine pasta
- 1 cup freshly grated Parmesan cheese
- 1 cup heavy cream
- ¼ cup fresh parsley, chopped
Instructions
- Prepare Ingredients. Chop the fresh garlic cloves finely and set all ingredients aside to have everything ready for cooking.
- Cook Sausage. In a large skillet over medium heat, add the sliced Italian sausage and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
- Sauté Garlic and Butter. Add the minced garlic and butter to the skillet with the sausage, stirring for 1-2 minutes until the garlic is fragrant and the butter is melted.
- Cook Pasta. In a separate pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente, then drain, reserving some pasta water.
- Make Creamy Sauce. Pour the heavy cream into the skillet with the sausage and garlic mixture. Stir in the grated Parmesan cheese until it melts and creates a smooth, creamy sauce.
- Combine Pasta and Sauce. Add the cooked fettuccine to the skillet, tossing gently to coat the pasta evenly with the sauce. Add reserved pasta water as needed to adjust the sauce consistency.
- Garnish and Serve. Sprinkle chopped fresh parsley over the top and serve immediately while hot.
Notes
- You can use spicy or mild Italian sausage depending on your spice preference.
- Reserving pasta water helps loosen the sauce if it becomes too thick.
- For a lighter version, substitute heavy cream with half-and-half or a creamy milk alternative, though the sauce will be less rich.
- Make sure not to overcook the garlic to avoid bitterness.
- This dish pairs well with a simple green salad or garlic bread.
