Description

These Funfetti Cake Pops are a delightful and colorful treat perfect for any occasion. Made from moist vanilla cake mixed with rainbow sprinkles and creamy frosting, then coated in a smooth layer of white chocolate, these bite-sized cake pops are fun to make and irresistible to eat.

Ingredients

Scale

Cake

  • 1 box vanilla cake mix (plus ingredients listed on the box)
  • 1/2 cup rainbow sprinkles
  • 1 cup frosting

Coating

  • 1/2 cup white chocolate chips

Other

  • 12 cake pop sticks

Instructions

  1. Prepare and Bake Cake: Follow the package instructions to prepare the vanilla cake mix, then bake it in a 9×13-inch pan. Once baked, allow the cake to cool completely to ensure it holds together well when forming the pops.
  2. Crumble and Mix: Break the cooled cake into fine crumbs in a large bowl. Add the frosting and rainbow sprinkles, then mix thoroughly until the mixture is evenly combined and sticky enough to hold shape.
  3. Form Cake Balls: Roll the cake mixture into approximately 1-inch diameter balls and place them on a baking sheet lined with parchment paper to prevent sticking.
  4. Melt Chocolate and Insert Sticks: Melt the white chocolate chips in a microwave-safe bowl by heating in short intervals and stirring in between to achieve a smooth consistency. Dip the tip of each cake pop stick into the melted chocolate, then insert the stick halfway into each cake ball. This helps secure the stick in place.
  5. Coat Cake Pops: Dip each cake pop into the remaining melted white chocolate, coating it fully. Allow any excess chocolate to drip off by gently shaking or tapping the sticks.
  6. Set Cake Pops: Place the coated cake pops back onto the parchment-lined baking sheet and let them set at room temperature or refrigerate briefly until the chocolate coating hardens completely.

Notes

  • Ensure the cake is fully cooled before mixing with frosting to avoid melting the frosting.
  • If the cake mixture is too crumbly to roll, add a little more frosting until it holds together.
  • You can substitute white chocolate chips with candy melts for easier melting and coating.
  • Store cake pops in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
  • Decorate cake pops with extra sprinkles immediately after dipping before the chocolate sets for extra flair.
