Instructions

  1. Prepare the Skillet: Heat a non-stick skillet over medium heat and melt a small amount of butter. This will prevent sticking and add flavor to the eggs and tortillas.
  2. Fry the Eggs: Crack an egg into the skillet, season with salt and pepper, and cook until the egg white is fully set but the yolk remains slightly runny. Carefully remove the egg from the skillet and repeat this process with the second egg.
  3. Assemble the Quesadilla: Place one tortilla in the skillet and evenly sprinkle half of the shredded cheese over it. Add the fried eggs on top, and if desired, layer on sliced avocado or any other optional toppings.
  4. Top and Cook the Quesadilla: Sprinkle the remaining cheese over the eggs and cover with the second tortilla.
