Rice and Veggies
- 2 cups cooked rice (preferably day-old)
- 1/2 cup diced carrots
- 1/2 cup peas
Oils and Seasonings
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
Eggs
- 2 eggs, scrambled
Instructions
- Heat the oil. Heat vegetable oil in a large skillet or wok over medium-high heat to prepare for cooking the vegetables and eggs.
- Cook vegetables. Add diced carrots and peas to the skillet and cook for 2–3 minutes until they become tender but still retain some crunch.
- Scramble the eggs. Push the cooked veggies to one side of the pan. Crack the eggs into the other side and scramble them until fully cooked, then combine with the veggies.
- Add rice. Add the day-old cooked rice to the skillet and stir everything together to mix the eggs, veggies, and rice evenly.
- Season and fry. Pour in the soy sauce, sesame oil, and black pepper. Continue stir-frying the mixture for 4–5 minutes until the rice is heated through and coated evenly with the sauces.
- Serve. Remove from heat and serve the fried rice hot. Enjoy your flavorful, easy-to-make meal!
Notes
- Using day-old rice helps prevent sogginess and gives the best fried rice texture.
- Feel free to add other vegetables like bell peppers, corn, or green onions based on availability and preference.
- For added protein, you can include cooked chicken, shrimp, or tofu.
- Adjust soy sauce quantity to taste, especially if you prefer a lower sodium diet.
