Scale
Dough Ingredients
- 2 1/4 tsp active dry yeast
- 1 cup warm almond milk (or any milk of choice)
- 1/4 cup melted coconut oil (or vegetable oil)
- 3 tbsp maple syrup or sugar
- 1/2 tsp salt
- 3 cups all-purpose flour (or gluten-free 1:1 blend)
Filling Ingredients
- 1 cup finely chopped fresh or frozen strawberries
- 1/3 cup coconut sugar or brown sugar
- 2 tsp ground cinnamon
- 2 tbsp softened vegan butter or coconut oil
Glaze Ingredients
- 1/2 cup powdered sugar
- 1–2 tbsp milk of choice
- 1/4 tsp vanilla extract
Instructions
- Activate Yeast: In a large bowl, combine the warm almond milk, maple syrup, and active dry yeast. Let this mixture sit for 5–10 minutes until it becomes frothy, indicating the yeast is activated and ready.
- Make Dough: Add melted coconut oil, salt, and 2 1/2 cups of flour to the yeast mixture. Stir to begin forming a dough. Gradually incorporate the remaining flour until the dough is soft but not sticky.
- Knead Dough: Knead the dough on a floured surface for 5–8 minutes or use a stand mixer until the dough becomes smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise for 1 hour until doubled in size.
- Prepare Filling: In a small bowl, mix finely chopped strawberries, coconut sugar, and ground cinnamon thoroughly to create the filling mixture.
- Shape Rolls: Roll out the risen dough into a 1/4-inch thick rectangle. Spread softened vegan butter evenly over the dough, then sprinkle the strawberry cinnamon mixture evenly on top.
- Roll and Slice: Firmly roll the dough from the long edge to form a log, then cut it into 9 to 12 individual rolls.
- Second Rise: Place the rolls into a greased baking dish, cover them with a cloth, and let them rise for another 30 minutes until slightly puffed.
- Bake Rolls: Preheat your oven to 350°F (175°C). Bake the rolls for 25–30 minutes until they turn golden brown and are cooked through.
- Make Glaze: Whisk together powdered sugar, milk of choice, and vanilla extract to make a smooth glaze.
- Glaze and Serve: Drizzle the glaze over the warm rolls just before serving to add sweetness and moisture.
Notes
- Use fresh or thawed frozen strawberries for the filling.
- For a gluten-free version, choose a 1:1 gluten-free flour blend.
- Adjust the amount of milk in the glaze to achieve your desired consistency.
- Let the dough rise in a warm place to ensure proper yeast activation.
- Store leftover rolls in an airtight container and reheat gently before serving.
