Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C). Place a 10-inch ovenproof skillet or cast-iron pan inside the oven to heat up along with it.
  2. Melt Butter in Hot Skillet: Carefully remove the hot skillet from the oven and immediately add the 6 tablespoons of salted butter. Swirl the pan gently to melt the butter and coat the bottom and sides evenly.
  3. Make the Batter: In a mixing bowl, whisk together 6 large eggs until frothy. Add 1 1/2 cups of whole milk, 1 1/2 cups all-purpose flour, 1/4 cup granulated sugar, and 1 teaspoon vanilla extract. Whisk until the batter is smooth with no lumps.
  4. Pour Batter Into Skillet: Quickly pour the batter into the hot, buttered skillet. The butter will sizzle as the batter hits the pan, helping create crispy edges.
  5. Bake the Pancake: Place the skillet back into the oven and bake for about 20–25 minutes until the pancake is puffed up and golden brown around the edges.
