Ingredients
Scale
Protein
- 200 grams chicken breast, thinly sliced
- 150 grams shrimp, peeled and deveined
Vegetables
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- ½ cup cabbage, shredded
- ½ cup snow peas, trimmed
- Chopped green onions, for garnish
Others
- 2 tablespoons vegetable oil
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional)
- 200 grams Pancit Canton noodles
- Salt and pepper, to taste
- Calamansi or lemon, for serving
Instructions
- Prepare the Noodles: Cook the Pancit Canton noodles according to the package instructions, typically boiling them for 3-5 minutes, then drain and set aside to prevent overcooking.
- Cook the Meat and Shrimp: Heat vegetable oil in a large pan over medium heat. Add the thinly sliced chicken breast and shrimp, cooking until they are just cooked through. Remove them from the pan and set aside to keep their tenderness.
- Stir-Fry the Vegetables: Using the same pan, sauté the onions and minced garlic until fragrant. Add the julienned carrots, thinly sliced bell peppers, and trimmed snow peas, cooking for 2-3 minutes until the vegetables are tender-crisp, maintaining their bright colors and texture.
- Combine Ingredients: Return the cooked chicken and shrimp to the pan. Pour in the chicken broth, soy sauce, and optional fish sauce. Stir everything gently and let it simmer for 2-3 minutes to blend the flavors and slightly reduce the liquid.
- Add the Noodles: Add the cooked Pancit Canton noodles into the pan. Toss well to combine all ingredients thoroughly and ensure the noodles are evenly coated with the savory sauce.
- Season and Serve: Adjust seasoning with salt and pepper to your preference. Serve hot with a squeeze of calamansi or lemon for a fresh citrusy note and garnish with chopped green onions for added flavor and color.
Notes
- For deeper flavor, marinate the chicken briefly in soy sauce before cooking.
- If Pancit Canton noodles are unavailable, substitute with other wheat-based egg noodles.
- Adjust the amount of fish sauce or omit it entirely for a milder taste.
- For a vegetarian version, omit the chicken and shrimp and substitute chicken broth with vegetable broth.
- Cook vegetables to your preferred crispness to maintain texture.
