Crust

- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 2 tbsp milk
- 1 tsp mint extract
- Green food coloring (optional, for festive color)
Chocolate Topping
- 1 cup semi-sweet chocolate chips
- 2 tbsp unsalted butter
Instructions
- Preheat and Prepare Crust: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. In a medium bowl, combine the chocolate sandwich cookie crumbs and melted butter. Stir until the mixture is well combined and has a crumbly texture.
- Bake Crust: Press the cookie mixture evenly into the bottom of the prepared baking pan to form the crust layer. Bake for 10 minutes, then remove from the oven and set aside to cool completely.
- Prepare Mint Filling: In a medium bowl, beat the softened butter, powdered sugar, milk, mint extract, and a few drops of green food coloring (if using) until smooth and creamy. Spread this mint mixture evenly over the cooled crust layer.
- Melt Chocolate Topping: In a microwave-safe bowl, melt the semi-sweet chocolate chips and butter in 30-second intervals, stirring thoroughly between each interval until the mixture is completely smooth and combined.
- Top Bars and Chill: Pour the melted chocolate over the mint layer and spread it into an even layer using a spatula. Refrigerate the bars for at least 2 hours, or until the chocolate topping has set and the bars are firm.
