Description

This Easy Cheesy Beef Nachos recipe brings together perfectly seasoned ground beef with a melty blend of sharp cheddar and mozzarella cheeses layered over crispy tortilla chips. Garnished with pickled jalapeños and fresh cilantro, it’s a quick and satisfying dish perfect for sharing or a tasty snack in just 25 minutes.

Ingredients

Scale

For the Nachos:

  • 1 pound ground beef
  • 1/2 onion, diced
  • 1 tablespoon minced garlic
  • 1.5 cups shredded sharp cheddar cheese
  • 1.5 cups shredded mozzarella cheese
  • Tortilla chips (as needed)
  • Pickled jalapeños (for garnish)
  • Cilantro (for garnish)

Seasonings:

  • 1.5 tablespoons cumin
  • 1 tablespoon oregano
  • 1/2 tablespoon paprika
  • 1/2 tablespoon chili powder
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 tablespoons light soy sauce
  • 1 teaspoon sugar

Instructions

  1. Shred cheese: Shred the sharp cheddar and mozzarella cheeses and set them aside for later use.
  2. Cook beef: Heat oil in a pan over medium heat. Add diced onions and minced garlic, sauté for about 30 seconds until fragrant. Add the ground beef, breaking up any clumps with a spatula, and cook until the beef is halfway cooked through.
  3. Add seasonings: Mix in cumin, oregano, paprika, chili powder, onion powder, and garlic powder to the beef. Stir thoroughly to combine all ingredients. Continue cooking until the ground beef is fully browned.
  4. Add soy sauce and sugar: Once the beef is cooked, stir in the light soy sauce and sugar to enhance the flavor.
  5. Drain grease (optional): Push the cooked beef to one side of the pan and tilt to collect excess grease. Remove the grease by discarding or soaking it up with a paper towel.
  6. Melt cheese: Reduce heat to medium-low. Spread the shredded cheddar and mozzarella over the cooked beef, cover the pan, and let the cheese melt for a few minutes.
  7. Assemble nachos: Arrange tortilla chips on a serving plate. Spoon the cheesy beef mixture over the chips. Garnish with pickled jalapeños and fresh cilantro leaves before serving.

Notes

  • For less grease, you can drain the ground beef after cooking.
  • Adjust the amount of jalapeños based on your desired spice level.
  • This recipe serves 2 but can be doubled for larger groups.
  • Use freshly shredded cheese instead of pre-shredded for better melting.
  • Serve immediately for the best texture and flavor of the chips and cheese.
