Ingredients
Scale
For the Nachos:
- 1 pound ground beef
- 1/2 onion, diced
- 1 tablespoon minced garlic
- 1.5 cups shredded sharp cheddar cheese
- 1.5 cups shredded mozzarella cheese
- Tortilla chips (as needed)
- Pickled jalapeños (for garnish)
- Cilantro (for garnish)
Seasonings:
- 1.5 tablespoons cumin
- 1 tablespoon oregano
- 1/2 tablespoon paprika
- 1/2 tablespoon chili powder
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 tablespoons light soy sauce
- 1 teaspoon sugar
Instructions
- Shred cheese: Shred the sharp cheddar and mozzarella cheeses and set them aside for later use.
- Cook beef: Heat oil in a pan over medium heat. Add diced onions and minced garlic, sauté for about 30 seconds until fragrant. Add the ground beef, breaking up any clumps with a spatula, and cook until the beef is halfway cooked through.
- Add seasonings: Mix in cumin, oregano, paprika, chili powder, onion powder, and garlic powder to the beef. Stir thoroughly to combine all ingredients. Continue cooking until the ground beef is fully browned.
- Add soy sauce and sugar: Once the beef is cooked, stir in the light soy sauce and sugar to enhance the flavor.
- Drain grease (optional): Push the cooked beef to one side of the pan and tilt to collect excess grease. Remove the grease by discarding or soaking it up with a paper towel.
- Melt cheese: Reduce heat to medium-low. Spread the shredded cheddar and mozzarella over the cooked beef, cover the pan, and let the cheese melt for a few minutes.
- Assemble nachos: Arrange tortilla chips on a serving plate. Spoon the cheesy beef mixture over the chips. Garnish with pickled jalapeños and fresh cilantro leaves before serving.
Notes
- For less grease, you can drain the ground beef after cooking.
- Adjust the amount of jalapeños based on your desired spice level.
- This recipe serves 2 but can be doubled for larger groups.
- Use freshly shredded cheese instead of pre-shredded for better melting.
- Serve immediately for the best texture and flavor of the chips and cheese.
