Description

A quick and flavorful Doritos Taco Salad combining seasoned ground beef, fresh vegetables, black beans, shredded cheddar cheese, and crunchy nacho cheese Doritos, all tossed with your favorite dressing for a satisfying and easy-to-make meal.

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 3 to 4 Romaine lettuce hearts, rinsed and chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped or sliced cherry tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
  • 1 cup Catalina dressing or your favorite salad dressing (ranch dressing also works well)
  • Fresh cilantro, optional


Instructions

  1. Cook Ground Beef: Brown and crumble the ground beef in a large skillet over medium-high heat. Once browned, drain the excess grease. Add the taco seasoning packet and the amount of water specified on the seasoning packet. Stir well until the mixture comes to a boil. Reduce heat to low, cover, and let simmer for 10 minutes. Remove from heat and allow the meat to cool slightly before assembling the salad.
  2. Assemble Salad Base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped tomato or cherry tomatoes, and shredded cheddar cheese. Add the slightly cooled ground beef and gently toss all ingredients together to combine evenly. You can serve immediately or chill the salad in the refrigerator until you’re ready to eat. Avoid adding the Doritos chips at this stage to keep them crunchy.
  3. Finish and Serve: When ready to serve, sprinkle the broken Doritos chips over the salad and drizzle with Catalina dressing or your preferred salad dressing. Toss gently to coat the ingredients evenly. Garnish with fresh cilantro if desired and serve immediately for the best texture and flavor.

Notes

  • Do not add Doritos chips until just before serving to prevent them from becoming soggy.
  • You can substitute Catalina dressing with ranch or any dressing of your choice.
  • For added freshness, garnish with chopped cilantro or serve with lime wedges.
  • Use lean ground beef to reduce fat content and improve the salad’s nutritional balance.
