Ingredients
Scale
Birria Quesadillas
- 2 cups cooked birria beef
- 1 cup shredded Mexican blend cheese
- 8 corn tortillas
Toppings
- 1/2 cup chopped onions
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Heat the skillet. Preheat a skillet over medium heat to prepare for cooking the quesadillas.
- Prepare the tortilla. Place one corn tortilla onto the heated skillet, warming it slightly on one side.
- Add fillings. On one half of the tortilla, layer a generous amount of cooked birria beef followed by shredded Mexican blend cheese.
- Fold the tortilla. Fold the tortilla over the fillings to create a half-moon shape, enclosing the ingredients.
- Cook the quesadilla. Allow it to cook until the cheese begins to melt, then carefully flip to cook the other side until it turns golden brown and crispy.
- Remove and keep warm. Take the cooked quesadilla off the skillet and keep it warm while you prepare the remaining ones.
- Repeat. Repeat the process with the remaining tortillas, birria beef, and cheese until all quesadillas are cooked.
- Serve. Serve the quesadillas hot, garnished with chopped onions, cilantro, and lime wedges for squeezing on top.
Notes
- Use fresh corn tortillas for authentic flavor and better texture.
- Cook birria beef beforehand; this recipe uses pre-cooked birria for convenience.
- Adjust cheese quantity according to your preference for cheesiness.
- Serve immediately for best taste and texture as quesadillas become soggy if left too long.
- Add a side of consommé for dipping if available to enhance the traditional birria experience.
