- 2 ripe bananas (mashed)
- ½ cup Greek yogurt
- ¼ cup peanut butter
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 cup oat flour
- ¼ cup cocoa powder
- ½ teaspoon baking soda
Add-ins
- ¼ cup dark chocolate chips
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper to prevent sticking.
- Mix the Wet Ingredients: In a large bowl, mash the ripe bananas thoroughly. Add Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir the mixture until smooth and well combined.
- Add the Dry Ingredients: Gradually stir in the oat flour, cocoa powder, and baking soda into the wet mixture until just combined, being careful not to overmix.
- Fold in Chocolate Chips: Gently fold the dark chocolate chips into the batter, distributing them evenly throughout.
- Bake: Pour the batter into the prepared pan and spread it out evenly. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Slice: Allow the bars to cool completely in the pan. Once cooled, slice into 9 equal squares and serve.
Notes
- Use ripe bananas for natural sweetness and better texture.
- Oat flour can be made by grinding rolled oats in a food processor or blender.
- If you prefer, substitute peanut butter with almond butter or sunflower seed butter.
- Dark chocolate chips add rich flavor but can be replaced with nuts or dried fruit for variation.
- Store the bars in an airtight container in the refrigerator for up to 5 days.
- These bars can be frozen for longer storage; thaw before eating.
