Cookie Dough

Instructions
- Combine Dry Ingredients: In a medium bowl, mix together the all-purpose flour and cocoa powder until evenly combined.
- Cream Butter and Sugar: In a large bowl, use a mixer on high speed to beat the softened butter and sugar until light and fluffy. Then, beat in the eggs and vanilla extract until the mixture is smooth and well blended. Reduce the mixer speed to low and gradually incorporate the flour and cocoa mixture into the wet ingredients until fully combined into a dough.
- Chill the Dough: Divide the cookie dough into two equal parts. Wrap each portion in plastic wrap and refrigerate for 1 hour to firm up, which will make rolling and cutting easier.
- Prepare Ice Cream Layer: Line a 9 x 13-inch baking pan with plastic wrap. Spread the softened ice cream evenly into the pan, smoothing the surface. Place the pan in the freezer for 1 hour to firm the ice cream layer.
- Preheat Oven: While the ice cream is setting, preheat your oven to 375°F (190°C).
- Roll and Cut Cookies: Lightly flour your work surface and roll out the chilled dough to about 1/4-inch thickness. Using a 2-1/2 inch heart-shaped cookie cutter, cut out heart shapes from the dough and transfer them to a baking sheet lined with parchment or lightly greased, spacing them about 1 inch apart. Use the tines of a fork to prick the tops of each cookie to allow steam to escape during baking.
- Bake Cookies: Bake the cookies in the preheated oven for 12 minutes. After removing from the oven, let them cool on the baking sheet for 2 minutes before transferring to wire racks to cool completely.
- Assemble Ice Cream Treats: Using the same heart-shaped cookie cutter, cut out heart-shaped portions from the frozen ice cream layer in the pan. Sandwich each ice cream portion between two cooled heart cookies. Place the assembled ice cream sandwiches back in the freezer until ready to serve, allowing them to firm up nicely.
