Description

A refreshing and vibrant Cucumber Tomato Salad featuring crisp cucumbers, sweet grape tomatoes, and tangy red onion, tossed in a light olive oil and red wine vinegar dressing with a hint of honey and fresh herbs. Perfect for a quick, healthy side dish or a light snack.

Ingredients

Scale

Vegetables

  • 1 English cucumber, unpeeled
  • 10 ounces grape or cherry tomatoes, halved
  • ½ small red onion, thinly sliced

Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • ½ teaspoon Kosher salt or fine sea salt
  • ¼ teaspoon black pepper

Optional

  • 1 tablespoon chopped fresh parsley, dill, and/or basil

Instructions

  1. Prepare Vegetables: Trim the ends of the cucumber, halve it lengthwise, and slice into ¼-inch thick half rounds for a crisp texture.
  2. Combine Ingredients: In a medium bowl, mix the sliced cucumber, halved grape or cherry tomatoes, and thinly sliced red onion to form the base of the salad.
  3. Make Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and black pepper until well combined and emulsified.
  4. Toss Salad: Pour the dressing over the salad mixture and gently toss to evenly coat all the vegetables with the flavorful dressing.
  5. Add Herbs: If desired, gently stir in freshly chopped parsley, dill, and/or basil to add a fresh herbal note to the salad.
  6. Serve: Enjoy this salad immediately for a fresh bite or chill it in the refrigerator for about an hour to let the flavors meld before serving.

Notes

  • Use fresh, firm cucumbers and ripe tomatoes for the best flavor and texture.
  • Adjust the amount of honey to suit your preferred level of sweetness.
  • This salad can be stored refrigerated for up to 2 days but is best enjoyed fresh.
  • Feel free to add other fresh herbs like mint or cilantro according to taste.
  • For a tangier dressing, add more red wine vinegar gradually.
