Ingredients
Scale
Meat and Vegetables
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups potatoes, peeled and diced
- 1 cup carrots, diced
Broth and Seasoning
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
Cheese and Dairy
- 2 cups shredded cheddar cheese
- 1 1/2 cups milk
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 1/2 cup sour cream
Instructions
- Brown the Meat: In a skillet over medium heat, cook the ground beef with the chopped onion until the beef is browned and the onion is softened. Drain excess grease to keep the soup from being greasy.
- Sauté Garlic: Add the minced garlic to the skillet and cook for an additional 30 seconds to release its aroma and flavor.
- Combine in Crock Pot: Transfer the beef mixture to the crock pot. Add the diced potatoes, diced carrots, chicken broth, salt, pepper, and dried basil. Stir everything together to combine evenly.
- Slow Cook: Cover the crock pot and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the vegetables are tender and flavors meld.
- Make Roux and Cream Sauce: In a small saucepan, melt butter over medium heat. Whisk in flour and cook for about 1 minute to form a roux, which will thicken the soup.
- Add Milk and Thicken: Gradually whisk the milk into the roux mixture. Cook while whisking frequently until the mixture thickens into a smooth, creamy sauce.
- Incorporate Cream Sauce: Pour the thickened milk mixture into the crock pot soup and stir to combine.
- Add Cheese: Stir in the shredded cheddar cheese until it melts fully into the soup, creating a rich cheeseburger flavor.
- Finish with Sour Cream: Stir in the sour cream until the soup is smooth and creamy. Taste the soup and adjust seasoning with salt and pepper if needed before serving.
Notes
- For extra flavor, add cooked and crumbled bacon or a dash of Worcestershire sauce.
- You can substitute ground turkey for a lighter version of this soup.
- Stir occasionally near the end of cooking to help cheese melt evenly and prevent sticking.
