Ingredients
Scale
Eggs and Cheese
- 2 large eggs
- 1/4 cup shredded cheddar cheese
- Olive oil or vegetable oil, enough to cover the bottom of the pan for frying
Chilli Oil
- 3 tablespoons olive oil
- 1 teaspoon red chili flakes
- 1 clove garlic, minced
- 1 teaspoon soy sauce (optional)
- Salt, to taste
- Black pepper, to taste
For Garnish
- Fresh herbs (such as cilantro or parsley), chopped, about 1 tablespoon
Instructions
- Prepare the chili oil: Heat 3 tablespoons of olive oil in a small pan over low to medium heat. Add 1 teaspoon of red chili flakes and 1 minced garlic clove to the oil. Allow the mixture to infuse for 2-3 minutes, stirring occasionally to prevent the garlic from burning. Optionally, add 1 teaspoon of soy sauce for extra depth. Remove from heat and set aside to cool.
- Heat the skillet: Place a non-stick skillet over medium heat and pour in enough oil to just cover the bottom of the pan, ensuring the eggs will fry evenly and get crispy edges.
- Fry the eggs: Crack 2 large eggs into the heated oil. Let them cook undisturbed for 3-4 minutes or until the edges become crispy and golden. Adjust cooking time to your preferred yolk consistency — less time for runny, more for firm.
- Add the cheese: While the eggs are still in the pan, evenly sprinkle 1/4 cup of shredded cheddar cheese over them, allowing it to melt slightly from the residual heat.
- Transfer the eggs: Carefully slide the cheesy crispy eggs from the skillet onto a serving plate to retain as much cheese and crispiness as possible.
- Drizzle chili oil: Spoon the prepared chili oil evenly over the eggs, making sure to distribute the garlic and chili flakes for maximum flavor in every bite.
- Garnish and serve: Sprinkle chopped fresh herbs such as cilantro or parsley on top. Serve immediately while warm and crispy for an irresistible dish.
Notes
- Adjust chili flakes quantity according to your preferred spice level.
- For a dairy-free version, omit cheddar cheese or substitute with a vegan cheese alternative.
- Use fresh garlic to get the best flavor and avoid pre-minced garlic which may be less fragrant.
- This recipe is best served fresh to maintain the crispiness of the eggs and cheese.
- For a gluten-free version, ensure the soy sauce used is gluten-free or omit it entirely.
