Instructions

  1. Cook Pasta: Cook the fettuccine or linguine according to the package instructions until al dente. Drain the pasta and set it aside to be mixed later.
  2. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced onion and bell peppers and sauté until softened, about 5 minutes. Then add the minced garlic, sliced mushrooms, and zucchini and cook for an additional 3 minutes to allow the flavors to meld.
  3. Add Seasonings: Stir in the smoked paprika, Cajun seasoning, dried thyme, cayenne pepper (if using), salt, and black pepper. Mix well to evenly coat the vegetables with the spices.
  4. Prepare Sauce: Pour in the unsweetened almond milk and canned coconut milk, then bring the mixture to a gentle simmer. Stir occasionally to combine all the ingredients.
  5. Thicken Sauce: Add the nutritional yeast and the cornstarch slurry (cornstarch mixed with water) to the skillet. Cook for 2 to 3 minutes, stirring constantly, until the sauce thickens and becomes creamy.
