Instructions

  1. Whip the Cream: In a large bowl, whip the heavy cream until soft peaks form, then set aside carefully to maintain the texture.
  2. Prepare Pumpkin Mascarpone Mixture: In a separate bowl, beat the softened mascarpone cheese with 1/2 cup of the sugar until smooth and creamy. Stir in the pumpkin puree, vanilla extract, and pumpkin pie spice until fully combined and uniform in color and texture.
  3. Fold the Whipped Cream: Gently fold the whipped cream into the pumpkin mascarpone mixture, mixing delicately until the mixture is light and creamy without deflating the whipped cream.
  4. Mix Coffee Soak: In a shallow dish, combine the cooled coffee with the remaining 1/4 cup sugar and coffee liqueur if using. Stir well until the sugar is completely dissolved.
  5. Assemble the Tiramisu – First Layer: Quickly dip each ladyfinger into the coffee mixture—do not soak too long to prevent sogginess—and arrange a neat layer on the bottom of a baking dish.
  6. Add Pumpkin Cream Layer: Spread half of the pumpkin cream mixture evenly over the layer of ladyfingers to create a smooth and even layer.
