Creamy Pumpkin Tiramisu is a delightful no-bake fall dessert that combines the classic Italian flavors of tiramisu with seasonal pumpkin and warm spices. This luscious treat layers coffee-soaked ladyfingers with a smooth pumpkin mascarpone cream, topped with a dusting of cocoa powder. Perfect for autumn gatherings or a cozy treat, it’s a comforting twist on a traditional favorite.
Ingredients
Scale
For the Cream Mixture
- 1 cup heavy whipping cream
- 8 ounces mascarpone cheese, softened
- 3/4 cup granulated sugar, divided
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
For the Ladyfinger Soak
- 1 1/2 cups strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
Other Ingredients
- 24 ladyfinger cookies
- 2 tablespoons unsweetened cocoa powder, for dusting
Instructions
- Whip the Cream: In a large bowl, whip the heavy cream until soft peaks form, then set aside carefully to maintain the texture.
- Prepare Pumpkin Mascarpone Mixture: In a separate bowl, beat the softened mascarpone cheese with 1/2 cup of the sugar until smooth and creamy. Stir in the pumpkin puree, vanilla extract, and pumpkin pie spice until fully combined and uniform in color and texture.
- Fold the Whipped Cream: Gently fold the whipped cream into the pumpkin mascarpone mixture, mixing delicately until the mixture is light and creamy without deflating the whipped cream.
- Mix Coffee Soak: In a shallow dish, combine the cooled coffee with the remaining 1/4 cup sugar and coffee liqueur if using. Stir well until the sugar is completely dissolved.
- Assemble the Tiramisu – First Layer: Quickly dip each ladyfinger into the coffee mixture—do not soak too long to prevent sogginess—and arrange a neat layer on the bottom of a baking dish.
- Add Pumpkin Cream Layer: Spread half of the pumpkin cream mixture evenly over the layer of ladyfingers to create a smooth and even layer.
- Repeat Layering: Dip the remaining ladyfingers into the coffee mixture and arrange a second layer over the pumpkin cream. Spread the remaining pumpkin cream mixture over this second ladyfinger layer.
- Chill the Dessert: Cover the baking dish and refrigerate the tiramisu for at least 6 hours or overnight to allow flavors to meld and the texture to set.
- Finishing Touch: Just before serving, dust the top of the tiramisu generously with unsweetened cocoa powder for a classic finish.
Notes
- Do not soak the ladyfingers for too long to avoid a soggy texture.
- For a stronger coffee flavor, increase the amount of coffee or coffee liqueur to your preference.
- This dessert tastes even better when chilled overnight, as it allows the flavors to fully develop.
