Description

This Creamy Potato & Sausage Soup is a hearty and comforting dish perfect for cooler days. Ground Italian sausage is sautéed with aromatic vegetables, then combined with tender chunks of yellow potatoes and a rich, creamy broth to create a luscious and satisfying soup that serves six. This recipe offers a balanced blend of savory flavors and creamy texture, making it an ideal cozy meal for family and friends.

Ingredients

Scale

Main Ingredients

  • 16 ounces ground Italian sausage
  • 1 cup small-diced onion
  • 1/2 cup small-diced celery
  • 1/2 cup small-diced carrots
  • 1/2 cup small-diced red bell pepper
  • 1 1/2 pounds little yellow potatoes, cut into chunks
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 3 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 1/2 cups heavy cream

Instructions

  1. Cook the sausage: Heat vegetable oil in a large pot over medium heat. Add the ground Italian sausage and cook until browned and cooked through, breaking it up with a spoon as it cooks. Remove the sausage from the pot and set aside.
  2. Sauté the vegetables: In the same pot, add the diced onion, celery, carrots, and red bell pepper. Cook for about 5 minutes until the vegetables soften. Add the minced garlic and cook for another minute until fragrant.
  3. Make the roux: Sprinkle the all-purpose flour over the vegetables and stir well to coat. Cook for 2-3 minutes, stirring constantly, to remove the raw flour taste and create a roux that will thicken the soup.
  4. Add broth and potatoes: Gradually pour in the vegetable broth while stirring to avoid lumps. Add the chunks of yellow potatoes and bring the mixture to a boil. Reduce heat to a simmer and cook until the potatoes are tender, about 15 minutes.
  5. Combine sausage and cream: Return the browned sausage to the pot. Stir in the heavy cream and heat through without boiling to prevent curdling. Cook for another 5 minutes to meld the flavors.
  6. Serve: Taste and adjust seasoning if needed. Ladle the creamy potato and sausage soup into bowls and serve warm, optionally garnished with fresh herbs or shredded cheese.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the pot before adding the cream.
  • Use turkey sausage for a leaner option.
  • Fresh herbs like thyme or rosemary can enhance the flavor.
  • This soup stores well in the fridge for up to 3 days and freezes beautifully.
