Cowboy Butter
- 1/2 cup unsalted butter, melted

- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
Assembly and Serving
- 12 slider buns or dinner rolls
- 6–8 slices provolone or Swiss cheese
- Optional toppings: caramelized onions, arugula, or pickles
Instructions
- Make the cowboy butter: In a bowl, combine melted butter, minced garlic, Dijon mustard, lemon juice, chopped fresh parsley, smoked paprika, red pepper flakes (if using), salt, and black pepper. Stir well until thoroughly mixed. Set aside to allow flavors to meld.
- Cook the steak: Season the thinly sliced steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the steak in batches if necessary, searing each side for 2 to 3 minutes until it reaches your desired doneness. Remove from heat and toss the steak slices in a few tablespoons of the prepared cowboy butter to coat them in flavor.
- Assemble the sliders: Slice the slider buns in half and arrange the bottoms on a baking sheet. Layer each bottom bun with seared steak slices, then add provolone or Swiss cheese slices, and any optional toppings like caramelized onions, arugula, or pickles. Place the top halves of the buns on the assembled sliders and brush the tops generously with the cowboy butter.
