Ingredients
Scale
Vegetables
- 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
Dairy & Eggs
- 1 cup cottage cheese (low-fat or full-fat based on your preference)
- 4 large eggs
- 1/2 cup milk (dairy or non-dairy)
- 1/2 cup shredded cheese (such as mozzarella or cheddar)
Seasoning & Oil
- 1/4 teaspoon salt (adjust according to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- Olive oil or cooking spray for greasing the baking dish
Instructions
- Prep Your Ingredients: Preheat your oven to 375°F (190°C). Chop the spinach, onion, and garlic. Grease your baking dish with olive oil or cooking spray to prevent sticking.
- Sauté the Vegetables: Heat a splash of olive oil in a skillet over medium heat. Sauté the onion until translucent, about 3-4 minutes. Add minced garlic and cook another minute until fragrant. Stir in the spinach and cook until wilted, around 2-3 minutes. Remove from heat.
- Combine the Mixture: In a large bowl, whisk together eggs, cottage cheese, and milk until smooth. Add the sautéed vegetables and stir in salt, pepper, and nutmeg if using. Finally, mix in the shredded cheese until evenly combined.
- Pour and Bake: Pour the mixture into the prepared baking dish. Bake for 30 minutes or until the quiche is set and slightly browned on top. The center should be firm to the touch but still have a slight jiggle.
- Cool and Serve: Remove from the oven and let the quiche cool for 5-10 minutes to set fully. Slice and serve warm or at room temperature, optionally garnished with fresh herbs like parsley or chives.
Notes
- You can substitute frozen spinach if fresh is unavailable; be sure to thaw and drain excess water.
- For a dairy-free version, use non-dairy milk and omit the shredded cheese or replace with a vegan alternative.
- Adding nutmeg is optional but enhances the depth of flavor in the quiche.
- This quiche can be stored in the refrigerator for up to 3 days and reheated gently.
- Feel free to add other vegetables like mushrooms or bell peppers for variety.
