Instructions
- Prepare the pan: Line a baking sheet or a 9×13-inch pan with parchment paper or lightly grease it. Set aside to make sure the candy does not stick after setting.
- Make the syrup mixture: In a large saucepan over medium heat, combine the butter, peanut butter, sugar, and light corn syrup. Stir constantly until everything is melted, the mixture is smooth, and the sugar has dissolved, about 3-5 minutes.
- Add vanilla and cornflakes: Remove the saucepan from the heat and stir in the vanilla extract. Gently fold in the cornflakes, making sure each flake is evenly coated with the syrup mixture.
- Shape the candy: Drop spoonfuls of the coated cornflakes onto the prepared baking sheet for clusters, or press the mixture into the pan if you prefer bar-shaped candy pieces.
- Optional chocolate drizzle: If desired, melt the semisweet chocolate chips using a microwave or double boiler method. Drizzle the melted chocolate evenly over the candy clusters or bars.
- Let set: Allow the candy to cool and set at room temperature for about 30 minutes. For quicker setting, refrigerate the pan until firm. Once set, break into pieces or cut into bars.
