Description

These Corned Beef Egg Rolls combine tender, flavorful shredded corned beef with crisp cabbage and green onions, all wrapped in crispy egg roll wrappers and fried to golden perfection. Served with a sweet and tangy honey mustard dipping sauce, they make a perfect appetizer or snack with a delightful crunch and savory filling.

Ingredients

Scale

Filling

  • 2 cups shredded corned beef
  • 1 cup shredded green cabbage
  • 1/2 cup chopped green onions
  • 1 tsp garlic powder

Wrapping

  • 12 egg roll wrappers

Frying

  • About 2 cups oil for frying

Dipping Sauce

  • 1/4 cup honey
  • 1/4 cup Dijon mustard

Instructions

  1. Prepare the filling: In a large bowl, combine the shredded corned beef, shredded green cabbage, chopped green onions, and garlic powder. Mix thoroughly to distribute all ingredients evenly.
  2. Wrap the egg rolls: Lay one egg roll wrapper on a flat surface so that it looks like a diamond shape. Place about two tablespoons of the prepared filling in the center of the wrapper. Fold the bottom corner over the filling, tuck in the sides tightly, and then roll the wrapper upwards to seal completely. Use a bit of water to moisten the top corner and seal the egg roll firmly.
  3. Heat the oil: In a deep skillet, pour in about 2 cups of oil and heat it over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for best frying results.
  4. Fry the egg rolls: Carefully place the wrapped egg rolls seam-side down into the hot oil. Fry each side for approximately three minutes or until they turn golden brown and crispy.
  5. Drain and serve: Remove the fried egg rolls from oil using tongs and drain them on paper towels to remove excess oil. Serve immediately while hot, accompanied by a dipping sauce made by mixing honey and Dijon mustard.

Notes

  • Make sure the oil temperature is correct before frying to avoid greasy egg rolls.
  • Seal the egg rolls tightly with water to prevent them from opening during frying.
  • Use fresh cabbage and green onions for the best flavor and crunch.
  • These egg rolls can be made ahead and fried just before serving for convenience.
  • Leftover egg rolls can be reheated in an oven or air fryer to maintain crispiness.
