Description

Delight in these irresistible Cookies & Cream Red Velvet Brownies, combining the rich flavors of red velvet cake with a luscious cream cheese swirl and topped with crunchy Oreo cookie pieces. Perfectly baked in just 45 minutes, these brownies offer a decadent twist on a classic favorite that’s sure to satisfy any sweet tooth.

Ingredients

Scale

Brownie Base

  • 1 box of red velvet cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Cream Cheese Swirl

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Topping

  • 10 Oreo cookies, crushed

Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking pan by greasing it or lining it with parchment paper to ensure easy removal of the brownies.
  2. Make Brownie Batter: In a large mixing bowl, combine the red velvet cake mix, vegetable oil, eggs, milk, and vanilla extract. Stir until the batter is smooth and well blended. Pour and spread this batter evenly into the prepared baking pan.
  3. Cream Cheese Swirl: In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until the mixture is smooth and creamy, free of lumps.
  4. Create Swirls: Spoon dollops of the cream cheese mixture on top of the brownie batter in the pan. Using a knife or skewer, gently swirl the cream cheese into the red velvet batter to create a marbled effect.
  5. Add Topping: Evenly sprinkle the crushed Oreo cookies over the top of the swirled batter, pressing them lightly into the surface to adhere during baking.
  6. Bake: Place the pan in the preheated oven and bake for 30-35 minutes. Check doneness by inserting a toothpick into the center—it should come out with a few moist crumbs but not wet batter.
  7. Cool & Serve: Remove the brownies from the oven and allow them to cool completely in the pan. Once cooled, cut into 12 squares and serve.

Notes

  • Use full-fat cream cheese for the best creamy texture in the swirl.
  • Ensure the cream cheese is softened before mixing for smoother incorporation.
  • Do not overbake to maintain moistness in the brownies.
  • Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
  • For an extra indulgent treat, top with whipped cream or a drizzle of chocolate sauce.
