Description

Colcannon is a traditional Irish dish made with creamy mashed potatoes blended with tender cooked cabbage or kale, green onions, and butter. This comforting and hearty side dish takes about 30 minutes to prepare and serves four, making it a perfect accompaniment to any meal.


Ingredients

  • 2 lbs russet or Yukon gold potatoes, peeled and chopped

Vegetables

  • 1/2 head green cabbage, shredded (or 3 cups chopped kale)
  • 4 green onions, thinly sliced

Dairy & Fats

  • 1/2 cup whole milk (or heavy cream)
  • 4 tablespoons unsalted butter, plus more for serving

  • Salt and pepper, to taste


Instructions

  1. Cook Potatoes: Place the peeled and chopped potatoes into a large pot of salted water. Bring the water to a boil and cook the potatoes until they are tender when pierced with a fork, about 15-20 minutes. Drain the potatoes well and return them to the pot.
  2. Cook Cabbage or Kale: While the potatoes are boiling, place the shredded cabbage or chopped kale in a separate pan with a small amount of salted water. Cook over medium heat until the greens are softened, about 5-7 minutes. Drain thoroughly to remove excess moisture.
  3. Mash Potatoes: Mash the drained potatoes in the pot with the unsalted butter and warm whole milk until the mixture is smooth and creamy without lumps.
  4. Combine: Gently fold the cooked cabbage or kale along with the thinly sliced green onions into the mashed potatoes. Mix until all ingredients are evenly incorporated.
  5. Season & Serve: Season the colcannon with salt and freshly ground black pepper to taste. Serve hot with an extra pat of butter on top for added richness and flavor.

Notes

  • You can substitute kale for cabbage for a different but equally delicious variation.
  • Use heavy cream instead of whole milk for a richer, creamier texture.
  • Make sure to drain the cooked greens thoroughly to prevent watery mashed potatoes.
  • Adding a knob of butter on top when serving melts into the warm colcannon, enhancing its flavor.
