Description

This Classic Pumpkin Pie Recipe is a traditional, creamy dessert perfect for fall and holiday gatherings. Featuring a smooth pumpkin filling spiced with cinnamon, ginger, and nutmeg, encased in a flaky pie crust, it’s an all-time favorite that blends sweet and warm flavors in every bite.

Ingredients

Scale

Pie Crust

  • 1 pie crust – 1 (store-bought or homemade)

Filling

  • 1 can pumpkin puree (15 oz or 425 g)
  • 3/4 cup granulated sugar (150 g)
  • 1/4 cup brown sugar (50 g)
  • 3 large eggs
  • 1 cup heavy cream (240 ml)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough for an initial high-heat bake that helps set the filling.
  2. Prepare Pie Crust: Place your pie crust into a pie dish and chill it in the refrigerator to keep it firm and prevent shrinking during baking.
  3. Make Pumpkin Filling: In a large bowl, thoroughly mix the pumpkin puree, granulated sugar, brown sugar, eggs, heavy cream, ground cinnamon, ground ginger, ground nutmeg, salt, and vanilla extract until the mixture is smooth and well combined.
  4. Fill the Pie: Pour the pumpkin filling evenly into the chilled pie crust, smoothing out the top.
  5. Bake Pie: Bake the pie at 425°F (220°C) for 15 minutes to help set the crust and filling. Then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes until the filling is set but still slightly jiggly in the center.
  6. Cool Pie: Remove the pie from the oven and place it on a wire rack to cool completely for at least 2 hours before serving to allow the filling to firm up.

Notes

  • Use canned pumpkin puree, not pumpkin pie filling, for best results.
  • Ensure the pie is cooled fully before slicing to get clean slices.
  • You can add whipped cream on top when serving for extra richness.
  • If crust edges brown too quickly, cover them with foil to prevent burning.
  • Store leftovers covered in the refrigerator for up to 3-4 days.
