  3. Add Raisins: Incorporate the raisins by kneading them into the dough during the last few minutes to ensure even distribution.
  4. First Rise: Place the dough in a lightly greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Shape Bagels: Punch down the risen dough and divide it into 8 equal pieces. Shape each piece into a ball, then poke a hole through the center and gently stretch it to form a classic bagel shape. Cover and rest for 10 minutes.
