Description

A rich and creamy Chocolate Strawberry Cheesecake featuring a chocolate cookie crust, a luscious cream cheese filling blended with fresh strawberries and melted semi-sweet chocolate, baked to perfection and topped with strawberry jam for a delightful fruity finish.

Ingredients

Scale

Crust

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted

Filling

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup fresh strawberries, chopped
  • 4 oz semi-sweet chocolate, melted

Topping

  • 1/2 cup strawberry jam
  • Extra strawberries for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the cheesecake.
  2. Prepare Crust: In a bowl, combine the chocolate cookie crumbs with the melted butter until the mixture resembles wet sand. Press this evenly into the bottom of a 9-inch springform pan, forming the base crust.
  3. Make Filling: Using a mixer, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract, then incorporate the eggs one at a time, mixing thoroughly after each addition. Stir in the sour cream and heavy cream until fully combined.
  4. Combine Ingredients: Gently fold the chopped fresh strawberries and melted semi-sweet chocolate into the cream cheese mixture to distribute evenly.
  5. Bake: Pour the cheesecake batter over the prepared crust in the springform pan. Bake in the preheated oven for 55-60 minutes or until the center is set and the edges are lightly golden. Remove from the oven and allow to cool completely at room temperature.
  6. Chill: Once cooled, refrigerate the cheesecake for at least 4 hours to let it fully set and develop flavor.
  7. Top and Serve: Before serving, spread the strawberry jam evenly over the top of the cheesecake. Garnish with extra fresh strawberries if desired for an attractive presentation and enhanced taste.

Notes

  • Make sure the cream cheese is softened to room temperature for a smooth filling without lumps.
  • Gently fold strawberries and melted chocolate to keep the filling light and airy.
  • Chilling the cheesecake thoroughly improves texture and flavor.
  • If you prefer a firmer crust, bake the crust alone at 325°F for 8-10 minutes before adding the filling.
  • Use a water bath during baking for an even creamier texture if desired.
